Merely having the ships to transport armies of the size necessary sounds difficult, if I can only carry the amount of soldiers equal to the crew, I can only carry about 6,000 men. Which isn't enough to attack even small plantations (if my understanding of their size is correct).

+1
I agree here, this is why i suggest its tied to ships cargo capacity instead of the original suggestion.

That would only work if you could carry both the crew and cargo capacity, as it seems to the be the case that most cargo space is less than the amount of crew you can carry in most ships.

Overall here i really dont this idea doesnt make a lot of sense.

Would plants have massive armies to fight against incoming armies.

This whole idea fits a lot better with national forts that do not exist.

Plantations might very well be guarded, just not on such a massive scale.

The ships that have more crew than cargo are warships.
If you sailing a warship and everyones in the crew is a foot soldier, your war ship would be useless and in theory unsailable.
What happens when they all go ashore and get killed in battle.
Whos goningvto sail the ship.

You would need cargo ships with soldiers as cargo.
With properly crewed war ships as military escorts

Seems an small incursion of marines from a war fleet could effectively attack a plant. ( part of the regular crew.)

Likewise plants could send theives to loot ships in the harbor.

Both acts could incur danger or something similar to danger.

They almost certainly won't all get killed in battle, if things are that bad they'll get away. You also don't need to have the soldiers be the ones actually sailing the ships, it could be you carry the amount of soldiers equal to the crew which is already there, plus the cargo. Plus in reality you only need about 6-10 men to sail a ship anyway, you just need a lot more to use it in combat properly.

That is, at least some of them will retreat.

6 to 10 men cannot sail a sotl effectively.

Im not certain how battles will function and if retreat will exist,
You might get 100% of your soldiers back injured or the may all die. Thats a different discussion, but is worth thinking about

Ok probably not 6 for a sotl, but 20 would probably do fine. If everyone dies one can simply hire crew from the port and sail away.
