Some of it is just good old fashion joking around. If you can't laugh at something, well, you should stop being so uptight.

Then of course there are insults done to get under one's skin. Agitation is the name of the game. Getting someone overwrought has its benefits, as they are more likely to not thinking rationally when there emotions are running high, which makes them more likely to makes mistakes.
