If fleets are limited to only 5 ships, how come I see fleets of more visiting ports?

You see a number of normal-sized fleets...

Each of those is a fleet (Merchant 29, Merchant 33, Merchant 34...). There are most likely 5 ships in each of those listed.

People tend to label their fleets fairly blankley, such as they make their first fleet - Merchant, and after making about sixteen more fleets of just adding a number on, you get to Merchant 17. Its naming the fleet, not the ships in it.

rlly i tend to try to be creative with my fleet names

All my creatively named fleets sank and I havent taken the time to rename my new ones. Arkoon had some really creative names for his fleets.
