Plantations different workers

How do you get different workers? I'm bringing imm. on my ship but they're just normal workers. How do I get laborers and such?

Just allot acres you have rented to those buildings. I when you allocate acres to housing, stewards will begin to go there. When you give acres to utilities, laborers head there.

Different buildings have different number of workers per acre. I have yet to figure out if I'm supposed to be trying to keep all the buildings at relatively similar acres, or if I should have them with totally different acres to keep their workforce even.
